Keto Cheesy Taco Skillet
Keto Cheesy Taco Skillet makes for a Quick and Easy Low-Carb Keto Weeknight Dinner.
INGREDIENTS
- 1 1/2 pounds grass fed ground beef
- 1 zucchini (chopped)
- 1 onion (chopped)
- 1 red bell pepper (chopped)
- 1 green bell pepper (chopped)
- 2 large tomatoes (chopped)
- 4 garlic cloves (finely chopped)
- 1 1/2 tablespoons chili powder
- 2 teaspoons cumin powder
- 2 teaspoons onion powder
- 1 teaspoon paprika
- 2 teaspoons oregano
- 1/4 teaspoon black pepper
- 1 1/2 tablespoons tomato paste
- 2 cups white shredded cheddar cheese
- salt to taste
INSTRUCTIONS
- Heat the oil in a skillet over medium high heat. Add onions, bell peppers, and zucchini and sauté about 5 minutes.
- Add the ground beef, garlic, and salt and mix well cooking until the meat is done.
- Add the taco seasoning ingredients and the tomatoes mixing well and cook for a couple of minutes to incorporate flavors.
- Mix in the tomato paste and cook for about 10 minutes.
- Spread the white cheddar cheese over the top of the beef and cover.
- Cook until the cheese is melted.
- Divide into 8 servings roughly around 1/2 cup.
