Keto Creamy Tuscan Chicken
Creamy Tuscan chicken is a quick ,easy, and mouth-watering delicious. It's juicy and tender when smothered in our delicious, buttery garlic keto cream sauce.
INGREDIENTS
- 2 boneless skinless chicken breasts (split into 4 pieces) (12 ounces)
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons unsalted butter
- 1 tablespoon extra virgin olive oil
- 3/4 cup diced onions
- 6 cloves minced garlic
- 1 1/2 cup diced tomatoes
- 3 cups baby spinach
- 1/2 cup grated parmesan cheese
- 1 cup Trader Joe's Heavy Whipping Cream
INSTRUCTIONS
- In a large skillet heat the oil on medium heat and add the chicken, Italian seasoning, salt and pepper and cook until chicken is done and no longer pink. Remove from the skillet and set aside.
- Reduce the heat to medium low and add the onions. Sauté for about 5 minutes until translucent and then stir in the garlic and cook just until garlic is fragrant.
- Add the diced tomatoes, spinach, and salt and pepper and cook until spinach starts to wilt.
- Add the parmesan cheese and heavy whipping cream mixing well and bring to a simmer.
- Reduce heat to low and simmer for about 3 minutes.
- Add the chicken back into the skillet and cook for about 5 to 8 minutes or until chicken is hot.
- Garnish the top with fresh or dry parsley and serve.
- Left overs can be stored in an air tight container in the fridge for 4 to 5 days or freeze for up to 3 months.
