Keto Mediterranean Rice
Keto Mediterranean Rice tastes great and it is quick and easy to make! It makes a great side dish for most fish and meat dishes!
INGREDIENTS
- 5 cups cauli-rice
- 2 cloves garlic (mashed)
- 2 tablespoons butter
- 3 tablespoons fresh basil
- 3 tablespoons fresh thyme leaves
- 3 tablespoons fresh oregano
- 1 tablespoon tomato puree (unsweetened)
INSTRUCTIONS
- Carefully dice the onion, chop the herbs, and mash the garlic.
- Heat the butter in a medium sized skillet and add the garlic and onions and cook for about 5 minutes stirring frequently until fragrant.
- Add the cauli-rice and cook for 5 to 10 minutes, depending on how tender you prefer the rice, stirring frequently.
- Add the tomato puree and mix well.
- Add the herbs and continue to cook for about 5 more minutes.
- Lastly remove from heat and season with salt and pepper to taste.
