Keto Mediterranean Rice

Keto Mediterranean Rice tastes great and it is quick and easy to make! It makes a great side dish for most fish and meat dishes!

INGREDIENTS
  • 5 cups cauli-rice
  • 2 cloves garlic (mashed)
  • 2 tablespoons butter
  • 3 tablespoons fresh basil
  • 3 tablespoons fresh thyme leaves
  • 3 tablespoons fresh oregano
  • 1 tablespoon tomato puree (unsweetened)
INSTRUCTIONS
  • Carefully dice the onion, chop the herbs, and mash the garlic.
  • Heat the butter in a medium sized skillet and add the garlic and onions and cook for about 5 minutes stirring frequently until fragrant.
  • Add the cauli-rice and cook for 5 to 10 minutes, depending on how tender you prefer the rice, stirring frequently.
  • Add the tomato puree and mix well.
  • Add the herbs and continue to cook for about 5 more minutes.
  • Lastly remove from heat and season with salt and pepper to taste.
