Keto Tortillas

Ditch the carbs! You have to try these quick and easy tortillas. They are sure to become your favorite wrap sensation!

INGREDIENTS:
  • 2 cups mozarrella (grated)
  • 1 cup Just Almond Meal
  • 1 tsp xanthan gum
INSTRUCTIONS:
  • Combine ingredients together in a microwave-safe bowl mixing well and microwave 1 minutes
  • Knead the cheese dough and form into a ball and place back into the microwave for 30 seconds.
  • Remove and kneed dough again. Form into 8 balls.
  • Place the mozzarella dough between two long sheets of parchment paper and place onto the tortilla press. Roll the dough out until it about 1/8 cm thick. 
  • Remove the parchment paper and place tortilla into a hot pan of coconut oil. Crisp them on each side and serve warm.

RECIPE TIP:

You may store uncooked tortilla dough in an air tight container or bag in the refrigerator for up to a week.
