Keto Zucchini Fritters

Keto Zucchini Fritters are low-carb, air-fried and delicious. These go with anything and make the perfect keto side dish!


INGREDIENTS
3 medium zucchini (shredded)
2 large eggs
2 cloves garlic
1/4 cup parsley
1/4 teaspoon black pepper
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
1 teaspoon salt
1/4 cup parmesan cheese (grated)
1/4 cup shredded mozzarella cheese
1/2 cup almond flour
1 tablespoon avocado oil
2 scallions (finely chopped)


INSTRUCTIONS

  • In a large bowl add shredded zucchini and salt and then set aside for 10 minutes.
  • Drain water from the zucchini with your hands by squeezing it.
  • In a separate bowl whisk the egg, shredded zucchini, parmesan, garlic, scallions, and black pepper.
  • Add the almond flour and mix until fully combined.
  • Preheat a large pan on medium high heat and add 1 tablespoon avocado oil.
  • Scoop batter in to the pan using an ice cream scoop or a large spoon and cook 2 to 3 minutes per side or until golden crispy and cooked through.
  • Transfer to a paper towel lined plate and repeat until all the batter is used.
  • You can also cook in an air fryer on 375 degrees. Place fritters in a single layer and spray with cooking spray or brush with oil and cook for 8 minutes and then flip over and cook for another 4 to 5 minutes or until crispy and golden.
  • This recipe will keep for 3 to 4 days in the fridge or 3 months in the freezer. Store in an air tight container.
