Keto Broccoli Salad
This is a favorite of mine. I've been looking for a way to replicate the salad I so used to enjoy. Here it is guys. Hope you enjoy!
INGREDIENTS:

6 cups of broccoli, cut into bite-size pieces

1/2 cup shredded Cheddar

1/4 red onion, thinly sliced

1/4 cup toasted sliced almonds
-
3 slices bacon, cooked and crumbled

2 tbsp freshly chopped chives
-
Kosher salt to taste

2/3 cup mayonnaise*
-
3 tbsp.apple cider vinegar*
- 1 tbsp.dijon mustard*
- Kosher salt to taste*
- Freshly ground black pepper to taste*
*Dressing ingredients
INSTRUCTIONS:
- Combine all salad ingredients in a large bowl and pour over dressing. Toss until ingredients are combined and fully coated in dressing. Refrigerate until ready to serve.
INSTRUCTIONS (FOR THE DRESSING):
- Whisk dressing ingredients together to combine and season to taste with salt and pepper.
NOTES:
When beginning a Ketogenic Diet it can be difficult to find healthy ways to get your fats in. This is one way that you will absolutely never lack for fats. If you are just starting out, I recommend going slow on the fats and working up to amounts above.
