Keto Zucchini Fries

Ingredients:
- 2 medium zucchini
- ½ cup grated parmesan
- 2 eggs beaten
- 1 cup crushed pork rinds
- ½ tsp Italian seasoning
- ½ tsp garlic powder
Instructions:
- Preheat oven to 400F
- Use a baking sheet and cover with parchment paper
- Cut zucchini lengthwise
- Grab a medium size bowl and beat the eggs.
- Next, crush the pork rinds until they look like breadcrumbs.
- Add grated parmesan and spices of your choice
- Dip zucchini pieces into the egg mixture until they are coated, then dip into the pork rind mixture.
- Place on baking sheet and roast them for 15-20 minutes until crispy!
Notes:
Make sure you dry the zucchini. If they’ve been in the refrigerator, they will start to condensate at room temp, which makes it harder for the egg to stick. Blot each zucchini slice with a paper towel before you begin
